Summer Salad

Sometimes A Yummy Salad Is The Answer......

With the heat wave upon us and desperation to stay cool, a fun flavorful salad may just be what we need for lunch or dinner! A great salad involves lot’s of colors, a variety of vegetables, filled of nutrients. The grilled shrimp helped spice up the salad, along with the grilled corn and candied pecans. 

Serves 2 people

Ingredients:

1/2 pound of shrimp, peeled and deveined

3 oz of spring mix salad

1/2 cup of sliced grape tomatoes

2 corn on the cobs

1/3 cup of English cucumber

1/3 cup of diced avocado

1/4 cup of feta cheese

1/4 cup of candied pecans

 

Season shrimp with your favorite spices (I used a BBQ rub). Coat in olive oil and grill on both sides until fully cooked. 

Coat shuck corn in olive oil and grill until tender.

In serving bowl, place spring mix salad and toss all ingredients on top. Sprinkle crush pepper on top and favorite salad dressing. Enjoy!
