Keto & Paleo friendly Jamaican Jerk Chicken.....

Spice up your dish with fun flavors around the world. While committing to a special diet like Keto or Paleo, cooking does not have to be boring. What are some of your favorite flavors? If looking for fun flavors to add to your spice rack, I highly recommend check out your local kitchen supply store. I love Caribbean flavors! My Jamaican Jerk Chicken is simple to make and a great go-to for meal prepping!


Jamaican Jerk Chicken

1 LB of chicken legs or thighs

1 LB of chicken wings (optional)

2 tablespoons of Jamaican Jerk Seasoning (recommend Flavor Gods)

1 tablespoon of garlic powder

1 tablespoon of onion powder

½ tablespoon of smoked paprika

½ tablespoon of sea salt

½ tablespoon of black pepper

2 beefsteak tomatoes cut in 4 halves

1 tablespoon of avocado oil

Grilled Veggies

2 medium zucchinis cut in halves horizontally

1 yellow bell pepper cut into 1 ½ inches

1 red bell pepper cut into 1 ½ inches

½ lb of cremini mushrooms cut into halves


Wash and prep chicken as needed. Cut two slits on meaty side of chicken legs. Season with all ingredients. I like to let me meat marinade for at least an hour, but this is optional. Heat cast iron or over safe skillet to medium heat. Coat bottom of pan with avocado oil. Grill chicken on both sides until well browned (about 5 minutes each side). Meanwhile, pre-heat oven to 350. Add beefsteak tomatoes to skillet, cover with lid and place skillet in oven. Cook for 30 minutes.

Wash and prepare veggies as needed. I grilled my veggies on a cast iron grill, however, roasting the veggies in the oven at 400 degrees is a great alternative. Coat with olive oil, sea salt and black pepper. Cook for 10 to 15 minutes. For grilling, lay veggies on grill, turning periodically to not burn. Lay on plate and coat with olive oil, sea salt and black pepper.

If not following a specific low carb diet, I recommend serving with brown rice! Enjoy
