Red Beans and Rice!

One of my favorite comforts food that’s loaded with fiber and great for all lifestyles, especially vegans! The ingredients are simple, but creole flavor is outrageous with just the right kick of cayenne! Of course, if spice isn’t your thing feel free to leave it out. Take a peak at the cooking video to learn just how easy this recipe is to follow! Enjoy

Ingredients
1 Bag of dried kidney beans
1 Medium yellow onion diced
5 Celery stems chopped small
1 Green bell pepper
3 Cloves of garlic diced
32 Fluid oz vegetable broth
1 cup of water
1 tablespoon of Creole seasoning
1/2 tablespoon of paprika (I prefer smoked paprika)
1 teaspoon of sea salt (or season to taste)
1/2 tablespoons of garlic powder
1 teaspoon of ground black pepper
1/2 tablespoons of onion powder
1 teaspoon of dried oregano
1 teaspoon of cayenne pepper
1 teaspoon of dried thyme

Steps
Follow the directions on back of the kidney bean package for hydrating beans quickly. Add all ingredients to crock pot. Slow cooked on high for 5 hours. Serve with brown rice and garnish with green onions
