Easy Grab & Go Egg Bites!
Although our work commute has shorten to a quick walk from the bedroom to our creative home office, our schedules have become more compound with kid schooling, around the clock Zoom meetings and nonstop household chores. Who has time to start the day with a healthy breakfast!
Here’s an easy idea, Egg Bites!
Preheat oven to 375. Get out your muffin pan and spray with some non-stick spray. Crack open 4 eggs, removing the yolks and leaving the egg whites. Crack 4 more eggs and scramble. Now, if you have no time for chopping, checkout pre-cut veggies in the produce section at the Supermarket or grab a bag of frozen chopped bell peppers from the freezer isle and add it to the egg mixer. If desired, add some shredded cheese. Next distribute the egg mixer evenly throughout the muffin pan. Bake for 30 minutes or until the mixer is firm and cooked through. Bon Appetit! Breakfast served!
4 egg whites
4 whole eggs
1 cup of sliced mini sweet bell peppers
1/2 cup of chopped red onion
1/4 cup of shredded cheese
Chopped green onion for garnish
Muffin pan (recommend silicone muffin pan)
